
Herb Shortbread Cookies
These herbal cookies are a type of buttery, crispy shortbread. They are delicious and very easy to make!
You will bake them at *325 for 15-20 minutes depending on how ‘done’ you like them. Shortbread is usually not allowed to brown, but I really like these with slightly golden edges.
Basic dough recipe for both flavors of cookie:
1/2 lb (2 sticks) softened butter
3/4 cup powdered sugar,
1/10 teaspoon salt
2– 2 1/2 cups flour.
Beat butter and sugar together. Gradually mix in flour. That’s it!
Next you will add your herbs and fruit zest. If you like more flavor, add just a little bit more of your herbs and fruit zest.
Orange Rosemary Cookies
To your basic dough recipe mix in:
1 – 2 teaspoons of grated orange zest
1 teaspoon of finely snipped rosemary leaves
Lemon Lavender Cookies
To your basic dough recipe mix in:
1- 2 teaspoons of grated lemon zest
1/2 -1 teaspoon of dried lavender buds -if you have fresh, use those– but use about 1/2 teaspoon more.
Don’t overdo the lavender…it will make your cookies taste like soap. Bleeccchh.
Roll into a log and chill the dough* for 3o minutes or longer, then slice about into 1/4″ slices.
Bake on ungreased cookie sheets at *325 until almost golden –usually about 16-20 minutes.
Cool on wire racks or counter and enjoy!
*Note: The prepared dough for both flavors freezes beautifully! You can make the dough ahead of time and just pull some out of the freezer for surprise company.
